Easy Christmas Breakfast Casserole Recipe for Holiday Mornings

Yuletide mornings never lose their fairy-tale delight; as well as the gentle murmur of happiness and the universal scent of cinnamon, maple, and the glistening sun coming through the window at the first hint of winter. For me, the gifts and magnificent ornaments were never a priority; the unlimited joy, the dear tales, and breakfast took their place.

I remember individually illuminated Christmas trees and the shades that reflected onto the house walls as well as the sounds that filled a house through the holiday playlist. But it was Mother’s delicious breakfast casserole that complemented the feeling of a holiday morning and was full of flavors I loved.

Over the years I also developed my version of this beloved custom and although the recipe remains the same for me there is always a little something that I introduce to it. It was all well and good, however, for this wonderful dish turned into the delight of our holiday brunch as the aromas pervaded the house, inviting all to come and gather at the table. Now I can happily bare my favorite of mine — a do-ahead dish perfect for a Christmas morning or any other occasion where you gather family and friends.

The Story Behind the Christmas Breakfast Casserole Recipe

It all started one Christmas morning when I was eight years old. We sat around the table, waiting in anticipation. My mom, ever the holiday chef, carried a hot, steaming casserole dish to the table. The scent was irresistible — a medley of baked eggs, crispy sausage, melty cheese, and tender hash browns. From that first bite, I was hooked. It was hearty, satisfying, and felt like home. Even today, when I make it, I remember her smile, her stories, and the laughter of that magical morning. Recipe

Do You Want To Prepare Your Own Christmas Morning Breakfast Casserole At Home? Let’s Go Ahead:

Ingredients

Here’s what you’ll need to create a breakfast casserole:

-2 Tbsp. olive oil

– 8 oz. deli ham, diced

– 1 medium onion, diced

-1 red bell pepper, diced

– 1 green bell pepper, diced

– 1 tsp. kosher salt

-1/2 tsp. black pepper

-1 tsp. fresh thyme, chopped

-6 croissants cut into 1 1/2- to 2-inch thick slices

-1 c. milk

– 3/4 c. half-and-half

– 1 tsp. hot sauce

– 5 large eggs

-2 c. grated white cheddar cheese, divided

-8 oz, or 1 cup, grated pepper jack cheese, divided

Directions

  • In a large skillet, heat 1 tablespoon olive oil; turn the heat to medium/high heat. Stir in the ham, onion, and bell pepper and cook, stirring once in a while, until softened, 8 to 10 minutes. Spoon the salt, pepper, and thyme in and stir for an additional minute. Take off from the fire and let it stand for a few minutes to cool.
  • The remaining 1 tablespoon olive oil should be used to brush the 13 by 9-inch baking dish. Finally, fold in croissant pieces then pour the mixture of ham and mayonnaise over it and again gently toss it.
  •  In another bowl which is a medium bowl combine milk, half and half the hot sauce, and eggs. Add half of both cheeses. Spoon the mixture over the croissants and then fold them gently so that the ingredients are mixed properly. However, what I’ll add is that you should cover and refrigerate the dish for at least an hour but up to 4 hours.
  •  Preheat the oven to 350°F. Take the casserole out of the refrigerator, loosen the foil, and let it rise for 15 minutes or so at room temperature before baking; Press down on the croissants every once in a while with a spatula to be certain they are sufficiently immersed.
  •  Transfer the casserole to the oven and bake in the center of the oven for 20–30 minutes more or even until the cheeses are golden brown Place the remaining cheeses on top of the casserole. Bake until the dough is crisp-edged and pale-golden brown, and the cheese is melted, for about 45mins. Best when served with a pause of 15 minutes.

The Return of Christmas Magic

As the aroma of the casserole fills your home, take a moment to share stories and laughter around the breakfast table. Whether it’s retelling old memories or creating new ones, this breakfast casserole is more than just a dish — it’s a reminder that Christmas is about togetherness, joy, and the simple comforts that make life sweet.

Let the warmth of the morning settle in, and enjoy every bite, every smile, and every moment of togetherness. This holiday don’t just make a meal; make memories.
